How to Create Gluten-Free/Grit-Free Chocolate Cake


As far as I know, no one else is publishing this method of creating gluten-free/grit-free cake from 100% rice flour. I’m trying to get the word out for many reasons – and the biggest reason being the cost of gluten-free products. This method is not hard, and will save you a lot of money! After you’ve made your first cake, you will learn that it doesn’t take a lot of preparation time to hydrate the flour, mix the batter, and then bake the cake.

There are two absolutely important things to learn with this method:

  • The rice flour must be very fine. Either grind it yourself or buy the finest grind possible. Asian stores carry finely ground rice flour.
  • The hydrated rice flour works best when it feels like play dough. Seriously! You don’t want the flour to be too wet. It will have a similar feel and structure to play dough.

It’s a good thing that I don’t make my living from publishing video. I really don’t have the hang of it yet. But you can get the general idea from watching this video. You will also notice that I have a pretty good southern accent…

I am not a professional baker, so I am really promoting a METHOD, not a cookbook. At least not yet. But I bet you could take this chocolate cake, put it in a jelly roll pan, add a cherry or raspberry filling with cream cheese, and roll it up for a cake roll. As I get time, I will try to provide more variations!

Gluten-Free Chocolate – Sultry and Sugar-Free

Moist Gluten-Free Chocolate Cakes and Brownies


I hope you all had a wonderful holiday season! I’m trying to catch up and get back to work.

I’ve been posing this question to many celiac discussion forums and groups – “If you could bake a very moist cake out of 100% rice flour, would you be interested?”

I know the proposition is puzzling. We’ve always been told that baking with 100% rice flour yields a product that is gritty. However, I’ve discovered a new way to bake with rice flour that creates a very moist cake.

I do a lot of things in my professional life. I’m a technical writer, analyst, and researcher. I’ve been able to translate these skills to my personal life in my quest to have a better life, even though I suffer from celiac disease.

I like to eat cakes and brownies on occasion! So, when I started this website, I started researching. And lo and behold I found an answer. It’s not an easy answer. It’s more complicated than opening a cake mix. But the results are much better. So, if you need a very good cake for a birthday or any special occasion, the extra time required with this method is worth it. And the cost savings are fabulous!

I have published a method – FREE – to explain how to create these moist cakes out of 100% rice flour. The only other “celiac” ingredient required is xanthan gum. No other flours – no tapioca flour, cornstarch, potato starch or other exotic flours. Just regular rice flour. The one thing I want to emphasize is that it appears to be very important to have a very fine grind of flour. I grind my own flour with a dedicated grinder. So, you will need to buy a very fine rice flour or grind your own.

Gluten-Free Organic Oats


Früchte MüsliI know this is a site about chocolate, but honestly, I’ve had all the chocolate I want for a few weeks!

I have had an inquiry about a source for gluten-free AND organic oats. I tend to think of organic oats as gluten-free. However, that is not necessarily the case.
